Baking Parchment / Meringues

I just got a new cake mixer and want to do a meringue now. So just asking if anyone know any substitute for baking paper? Can aluminium foil do it? Will it catch fire not? T_T

And anyone got any simple meringue recipes please share here!! Really simple ones like just require egg whites and sugar or smth coz I don't have cream of tartar at home.

Re: Baking Parchment / Meringues

I think that aluminum isnt the best option cuz it might catch fire (this i do not know)
just go to SKP or any other bakery shops to get baking paper its not costly.

4 large egg whites , at room temperature
115g caster sugar
115g icing sugar

Preheat the oven to 150C/300F/Gas 2.

Tip the egg whites into a large clean mixing bowl (not plastic). To make sure it's clean you can wipe the bowl with vinegar, because any oil will stop the whites from fluffing up. Beat them on medium speed with an electric hand whisk until the mixture resembles a fluffy cloud and stands up in stiff peaks when the blades are lifted.

Now turn the speed up and start to add the caster sugar, a dessertspoonful at a time. Continue beating for 3-4 seconds between each addition. It's important to add the sugar slowly, as it helps prevent the meringue from collapsing later. Don't over-beat. When ready, the mixture should be thick and glossy.

Sift a third of the icing sugar over the mixture, then gently fold it in with a big metal spoon or rubber spatula. Continue to sift and fold in the icing sugar a third at a time. Again, don't over-mix. The mixture should now look smooth and fluffy.

Shape 15 large spoonfuls of the meringue onto 2 sheets of parchment paper and bake in the oven for 15 minutes.Lower the oven temperature to 110C/225F/Gas ¼ and cook for a further 2-3 hours until very crisp and dry.

Leave to cool, then store in an air tight tin. ENJOY.

i use recipes from this online blog, so i copied this simple meringue recipe off it to show you. hope you have fun making it XD

aluminum won't catch fire in the oven no worries use it for normal baking alot at 350F for 1 hour and it works just fine.
