For Buffet, it could be KuShinBo at Suntec.
For Alar Carte Buffet: Hanabi Restaurant (More Fried Items)
Minori Restaurant (More Grilled Items)
Both are opened by the same person but now he is stand alone in Minori while the other is runned by his ex partner from what i heard.
Budget: Waraku
Quality and Menu Ordering: Ichiban Boshi in Suntec Basement for its freshness
Ichiban Sushi in Parkway Parade for good value and quality
I think these 2 under same management.

Personally, I think Ichiban is value for money. They have some creation sushis which cannot be found anywhere else. Some of it are quite nice..
Sushi Tei has fresher sashimi.. If you're a sashimi fan, you can go to Sushi Tei. The salad comes with pretty generous servings of sashimi.
If you like alacarte items, Waraku is nice too.. =) These are the more common and authentic Japanese restaurants, I think

My recommendation:
IKOI Japanese Restaurant - Mirama Hotel
Nice small quaint restaurant that serves great Jap food! | Tried Ikoi once in their VIP room. Really nice little room with a lot of japanese decorations and stuff. The waitressess will keep coming back and asking for your orders. No extra charge for the VIP room, just gotta have 12 people at least, and gotta book in advance. For those interested, here's their number - 68873788 (just double check if they have changed their number. This was the number i called to book back then)

Well, for Japanese homemade cuisine, you should try the Restaurant Chako (Hong Leong Garden Shopping Centre). It's at West Coast Way, if you are not familiar where Hong Leong Garden SC is. It's cooked by a Japanese obasan, and her daughter helps out in the kitchen. You can google for Restaurant Chako for reviews of the place and food...
Note: It's not for those who are in a hurry! Expect waiting time of around 40 minutes for food to be served, as the obasan will only start to cook when you're there.

I like the one at beach road opposite Concourse, a roll of old shops and only 1 Japanese restaurant, has been around for years but sorry can't recall the restaurant name, they serve barbecue Japanese food too.

I tried Ma Maison recently. Yummy indeed, very cosy place too
Ikoi @ Miramar is good too. Sashimi super good, presentation also very good. Just the price abit pricey.
