Chef Maroccan Chicken & Cous Cous Salad

Olive or Canola oil?which one you prefer? Both are great source of Omega 3 fatty acid can help to reduce the risk of heart disease,cancer, diabete and high blood presure.Normally i used canola olive oil for my cooking such stir-fries, roasting , pasta and salad.You can buy canola olive oil from fairprice and boneless chicken breast(Chef Delights) so i share with you guys and enjoy with your loved one..

Serves 2

1 tsp paprika
1/4 tsp cumin
1/2 tsp salt
1/4 tsp ground black pepper
1 tbsp Canola Olive Oil
2 pieces Chef Delights Chicken Boneless Breast, thawed

For the cous cous salad

1 cup cous cous
2 tbsp saltanas(raisin)
2 cups hot water
1/2 tomato, chopped
1 tsp orange blossom water(optional)
1 tsp salt
1/2 tsp cinnamon powder



1)Place the paprika.cumin.salt. pepper and oil in a bowl to mix
2)Rub over the chicken breast and leave to marinate in the fridge for 15 mins after bring it to room temperature.
3)Preheat over to 180*C for 30mins
5)Put on oven tin with foil and bake the chicken. skin side up for 20 min.Set aside

To make cous cous salad

1)Place cous cous and sultanas in a large bowl and pour hot water over it,Leave for 8 min untik both will absorb the water.
2)Rub the cous cous between your hands to loose any lumps
3)Mix the chopped tomatoes,orange blossom water(your choice if you want),salt and cinnamon into cous cous.**Be sure to blend well**
4)To serve by placing the cous cous salad on a plate and topping with baked chicken and chopped parasly leaves
