Chocolate Orange Ice-cream cake recipe



Use store-bought cake and ice cream to make this orangey-chocolate treat.

Chocolate Orange Ice-cream cake recipe

Ingredients


1 Sara Lee chocolate pound cake, cut into 0.5inch-thick slices
1 small can mandarin oranges, drained
500ml vanilla ice cream
2 tbsp orange blossom water or orange liqueur
300ml thickened cream
1 bar dark chocolate, shaved with a vegetable peeler

Method

Cover the inside of a small but deep bowl with two to three layers of cling film. High-sided cereal bowls or soup bowls work well.

Pack bottom and sides of bowl tight with cake slices, leaving a hollow in the centre. Douse inside of cake bowl with orange water (available at any good baking shop) or liqueur. If you prefer, use the liquid from the canned oranges.

Drain the orange slices and place in a layer at the bottom of bowl (save a few oranges for topping).

Stuff remaining cavity with vanilla ice cream, pack it down tight and then cover with more cake doused in remaining liquid.

Cover the bowl with two to three layers of cling film and press down to compact. Return to freezer for four to six hours.

To serve, remove from freezer, remove cling film and up-end the contents of the bowl onto a flat plate - it should look, as said, like a mini-mountain.

Top with cream, remainder of oranges and chocolate shavings and serve immediately, to be cut open at the table.
