Curry Kapitan recipe



This chicken curry has a special touch of ginger flower or bunga kantan.

The Kari Kapitan is a classic local curry simple enough for Ramadan. The key to making this tasty curry is in the spices used and the methods of cooking.

There are many versions of this dish that has different spices.

However no spices and curry powder is needed in this recipe as we will only use fresh ingredients.

Curries have and will always be a much sought-after dish in many families during Ramadan.

Kari Kapitan recipe

4 whole chicken leg, preferably skinless (cut into 4 pieces each, washed and drained)

Ingredients to be blended

4 onions

50 grams dried chillies

50 grams red chillies

30 grams tumeric

2 stalks lemon grass

1 piece ginger (2 inch in size)

50 grams lengkuas or galangal

5 buah keras or candlenut

Other ingredients

2 daun kunyit or turmeric leaves

5 daun limau or lime leaves

2 bunga kantan or ginger flower (cut into halves)

200 grams coconut milk

Method

1. Fry blended ingredients, daun kunyit, daun limau and bunga kantan together till the oil surfaces.

2. Add in chicken and stir until chicken is cooked.

3. Season with some salt and a bit of sugar.

4. Add in santan and bring to boil. Ready to serve.
