Indian style Fried Rice recipe

THE month of Ramadan can be quite hectic for working parents who rush home to prepare a Buka Puasa meal for their families.

It is not easy trying to whip up a meal within an hour and sometimes a simple Fried Rice with lots of ingredients is the perfect dish for the entire family.

Bachelors craving for a spot of home cooked food will also find this delicious recipe ideal.

My mother enjoys cooking and during one of her experimental days, she came up with the Indian Style Fried Rice which is both easy and delicious.

Ingredients

2 1/2 smalls bowls of rice

1/2 chicken breast (Note: chicken meat slices can be substituted with minced chicken, mutton or beef)

2 teaspoons of ginger garlic paste ( one inch ginger piece and 3 pips of garlic pounded together)

3 tablespoons meat curry powder (2 tablespoons to be mixed in water and made into paste)

1 medium size onion diced

1 small bowl of mixed vegetables.

Methods
  1. Slice the chicken meat to 1/2 inch lengths and marinate with a 1 tablespoon of meat curry powder, 1 teaspoon of the ginger garlic paste and salt to taste.
  2. Heat up 2 tablespoons of oil and shallow fry the marinated chicken.
  3. Add 1 1/2 tablespoons of oil in the same pan and saute the onions. When lightly brown, add 1 teaspoon of ginger garlic paste followed by the meat curry powder paste. Stir until fragrant.
  4. Add the mixed vegetables, season with salt to taste and cook for about three minutes. Then add the rice and stir well. Season to tase.
  5. Lastly add in the fried chicken meat and stir for another five minutes. Remove and serve.
