Know the different types dressing

MAYONASIE: THE MOTHER BASE 1/2 Lit

INGREDIENTS:
2 egg yolks
3/4 teaspoon salt
1/2 teaspoon powdered mustard
1/8 teaspoon sugar
Pinch cayenne pepper
4 to 5 teaspoons lemon juice or white vinegar
1-1/2 cups olive or other salad oil
4 teaspoons hot water

PREPARATION:
Beat yolks, salt, mustard, sugar, pepper, and 1 teaspoon lemon juice in a small bowl until very thick and pale yellow. (Note: If using electric mixer, beat at medium speed.) Add about 1/4 cup oil, drop by drop, beating vigorously all the while. Beat in 1 teaspoon each lemon juice and hot water. Add another 1/4 cup oil, a few drops at a time, beating vigorously all the while. Beat in another teaspoon each lemon juice and water. Add 1/2 cup oil in a very fine steady stream, beating constantly, then mix in remaining lemon juice and water; slowly beat in remaining oil. If you like, thin mayonnaise with a little additional hot water. Cover and refrigerate until needed. Do not keep longer than 1 week.

THOUSAND ISLAND SAUCE: 1/2 Lit

bell pepper chopped -20g any colour
parsley 1/2 tsp chopped
tomato ketchup 2 tbp
chili sauce 1/2 tbp
tomato paste 15g
onion chopped 10g
gerkin chopped 10g
sugar pinch..

ALL RECIPE ARE 1 IS TO 1
ALL U NEED IS THE MOTHER BASE N MIX IT WIF THEM..

TAR TAR SAUCE : 1/2 Lit

1 hard boil egg - juz need 1/2 of the egg white chopped
gerkin 20g
capes 10g
onion chopped 25g
parsley 5g

same method: juz fold in wif the mother base n u get yr tar tar sauce
if u are those lazy type.. u can buy ready MAYO.. and mix in wif them too

COCKTAIL SAUCE : 1/2 Lit

400g mayo
50ml tomato sauce
2 dash tabasco
5g tomato paste
25g brandy / whisky
20ml cream
1/4 orange juice pinch salt

Note : its ok wif u dun hav brandy / whisky

mother base mean.. its the main base u need to hav.
and get the type of dressing like wad i had post..
all need a base tat is mayo. =)

haha... chef, the terms u used are not quite understandable by layman...

but kudos to u !! these are very useful info for pple who wans to learn...
but i suggest u may wanna teach us more simple sauce like basic brown sauce? black pepper sauce? and maybe a red wine sauce ??

yes brown sauce is also a mother base sauce.. den u can get yr red wine sauce etc. lolx.. cos u needs to hav a brown stock 1st to get a browen sauce =( more troublesome haha!

haha.. tat wan can buy wan.. MAGGIE brand brown stock.. so no point bah.. if u wan to thicken yr stock or sauce juz add simple ROUX
ROUX its a thickening agent there 2 method of doing it.
1st : butter 50g & flour 70g mix together (butter muz be totaly caremise
)
2ns : flour & olive oil
