My recipe to share.....

The first recipe that i am going to share out of my many many..i think i should start with italian.. This recipe i learn it from nigella but i change it a bit here and there to make it to my taste. To me there will always be room of improvement in cooking and the recipe can change a million time for one simpler dish. So here's the recipe for pasta ala cabonara..

What you need : cook for 2- 3 person

2 Eggs
1 Tbs of cream
1 to 1 1/2 Tbs of grated parmesan cheese
100g of streaking bacon
Pasta, about 250 to 300g for 2 person( spag, fettucini, linguini<recommanded>)
Olive oil or best will be extra virgin olive oil

What you have to do:
Boil the water, pour in some olive oil and some salt, let it boil then put in the pasta

Mean while crack the egg, add in the cream, cheese and mix it well, leave it aside or in the fridge

Make sure not to over cook the pasta, it must be al donte to taste good, according to gordon ramsey, overcook paste are shit and even dogs don't eat it, so make sure to check your pasta.

After your pasta is cooked, drain it and leave it aside first. Then cut your bacon into sizes of your choice, then heat the pan, put some olive oil and then sautee the bacon.

Till you smell the fragrance of the bacon you can add in your pasta and sautee together so that the pasta will fuse in with the bacon and the olive oil flavour.

Plate the paste, then pour the egg mixture over it. The heat of the pasta will cook the egg. Mix well and let it set for 40 sec before eating it.

Enjoy!

Little tips on baking cookie..

Wonder how to achieve famous amos kind of cookie texture? What kind do you prefer? chewy or crunchy?

Here's a little tips.. Some cookie recipe require butter while some require oil, here is what you get after using either one of it..

To use oil, the cookie you baked will be more hard and chewy..

To use butter, you will be guarantee the crunchy texture!!

Hi nice to meet someone who likes to cook. I love cooking. Cook anything like grill chicken, bake rice, curry chicken etc etc. I also love to bake. What about you? Do you like baking?

Yeah..but normally i only bake once a year during christmas so that i have wrap it as a gift and distribute to all my friends..and most of them will just wait a year just for my cookie..but normally i just cook at home for myself and my mum as both my bf and my dad is a chef..and chef doesn't eat anyone else cooking other than their own..bad bad habit..anyway..i will share more of my recipe and tips here..so support me k..

Always mix cream cheese when they are in room temperature..this will ensure that your cheesecake will be smooth and luscious..

Noodle soup for needy ppl late at night..

Using chicken or fish cube or ready made soup for me is a super no no as they contain alot of msg.. So here's is something you can try to make your supper a little bit more healthy..

What you will need:

10g of sliver fish (like ikan billies..but in white and smaller in size)

Dried scallop 10g( there are two kind, sweet and salty kind, the sweet kind is better to use on porridge which i will add in the recipe later on)

noodle.. ( thick bee hoon or udon etc, but if you are using yellow noodle, do remember to cook it on a diff pot and drain away the liquid before putting it in the soup for a final boil.)


Firstly you will put in all the sliver fish on a heated pan and fried it for a while, no oil no water..this will remove the fishy smell of the sliver fish and at the same time it will make the enhance the fragance of the sliver fish more and taste better as soup.

After a min fried..add in water and then the dried scallop..let it boil first before put it on simmer..

There is always choice of ingredient you want to eat along with the noodle, normally i like to put enoki mushroom, button mushroom, brocolli, homemade wanton, seaweed chicken..

After all the flavour is in the soup, add in your ingredient and then follow by the noodle and have it for final boil.. then serve it..

if during the boiling process the soup get reduce too much and get too salty..just add in some water and sugar to belance the salty taste..

Tips : Abugine (eggplant)

some time when we cook abugine, we will find that it will taste a bit bitter..this is how you remove the bitter taste..

Before cooking..salt the abugine for about 5 mins, as salt will have all the bitter seed water to come out..so if you salt it, it will not be bitter anymore when you cook it

Make your own pasta..

Fresh made pasta is always more expansive in supermarket than those dried one, why not make your own fresh pasta? Every chef has different way of making pasta, this i learn it from my other half, and it's actually quite easy, so if you have a pasta making machine at home, why not try this out..

1 Serving = 100g of plain flour, 1 egg
2 Serving = 200g of plain flour, 2 eggs

Mix the egg and flour into a dough, may add a bit of salt. Roll it in the pasta machine, double fold it will make the pasta more Q. After that you can cut the pasta to the shape you want or use it to make raviolli etc..

Salmon's Tip : There are many different kind of salmon, some are suitable for sashimi while some are more suitable to be cooked. If you wan to get sashimi grade salmon you can go to market place, mediya etc. Those you see in NTUC are not really suitable.

No matter how you cook salmon, be it bake, pouch, gril etc.. never fully cook the salmon.. just cook it till around 85 percent, leave it about 1 min before serving it as to let the heat of the salmon cook by itself so when it reach you it will not be over cooked and dry but instead it will remain it juicy, smooth and soft texture..

Comfort food ; Chocolate chips Muffins

dry ingredient
1 3/4 plain flour
2 tsp baking powder
1/2 tsb baking soda
1 3/4 sugar
2 tbs of coco powder
3/4 cup of chocolate chips

wet ingredient
1 cup of milk
1 tsp of vanilla extract
1/3 of oil


mix the dry ingredient then mix it together with the wet, put it in the muffins cup..bake for 20 mins at 400 degree F..

I've always like to bring my own lunch box to school and most of you doesn't was because it is hassy and it also messy to prepare food early in the morning.. The reason behind why i bring my own lunch box was because i totally hate the food in my school, it taste like crap and quite expansive as well.... so here's are the few item i like to mix together for lunch box in sch.

Normally i don't make fried noodle or anything as it will take a long time and it will be so dry by the time you eat it...

Here's what i like to bring

Mash potato
Stir fried minced beef
Scamble egg
German sausage
Baked bean
Sandwiches..

Some of the things up there can be brought from NTUC..like sausage baked bean etc..but i do make my own mash potato instead of getting those power kind.. Here's the recipe of my mash potato..

You'll need about 600 gram of potato..use new potato if you do not want to peel the skin..
Cream, butter, nutmeg.. just these ingredient will do..

First you got to boil the potato till soft, normally it take about 40 to 50 mins..

Once done you just mash it.. add in the butter and grine in some nutmeg.. add the cream in.. as for the amount of cream to put depend on how dense you wan the mash potato to be. salt and pepper to taste..add in some parmesson cheese will make it more frangrance as well. this can last about 3 days in fridge..rmb to cover..every morning before packing it..make sure to microwave it till very hot..about 1 min to 1 1/2 mins.. you can mix it with the fried minced beef or scamble egg sausage etc..
No hotdogs plS! It's actually junk food and the calories in each is kinda scay..if you wan to have a heathy diet..stay away from it..

This is the reason why you shouldn't buy ready made bolognese sauce from supermarket..

To make your own bolognese sauce is really really easy.... After you see this you might reconsider getting ready made sauce next time.

What you need:
Can of tomato Puree ( fresh tomato will, just boil for 15 seconds, peel , remove seed, and blend it)

Minced beef

Onion

Garlic

Oregano

Bay leaf

Rosemary

Salt & pepper

What you need to do :

Dice the onion, chop the garlic. Oil the pan and add onion and garlic fried till fragrance.

Add in the minced beef, fried till all the jucice come out then add in the herbs..

Simmer for a while and add in the tomato puree..

Salt and pepper to taste..

It's ready!!

Simple and taste great!
