Rhubarb cake recipe



The cake is filled with rhubarb, which tastes like berries but does not quite look like them.

Back in May, I received a heartwarming package from my friend Monika, who lives in Heidelberg, Germany. Worried by the earthquake and the ensuing nuclear crisis, Monika had called me repeatedly after March 11.

She kept checking on me through April by e-mail, and then in May, I received the package, filled with beautifully wrapped presents for me and my children, and touching letters.

She also enclosed some recipes for asparagus, which was in season in Germany. Monika has often told me how German people enjoy asparagus during that time, and I was excited to find a small pack of ready-made powdered hollandaise sauce with her recipes.

To cook the instant sauce, which I have never seen in local supermarkets, I just had to mix the powder with water and bring it to a boil, then mix in a piece of butter. I immediately ran to the supermarket and bought a bunch of white asparagus.

Monika also sent me a great recipe for rhubarb cake, along with many beautiful photos of her baking it to show me the details of the cooking process. Naturally I wanted to buy rhubarb right away, too, but I couldn't find any at nearby stores.

Monika strongly recommended I try the recipe, so I checked on the Internet and found a store in Nagano that would deliver fresh rhubarb.

Thrilled, I ordered several kilograms, but realized later I didn't need that much for the cake, so I called Monika and asked what to do with the rest.

She suggested making rhubarb jam, which turned out to be very tasty. Although rhubarb is still not very well known in Japan, my family and friends loved the cake filled with rhubarb, which tastes like berries but does not quite look like them.

Fresh rhubarb can be cut and frozen, so I still have two portions to use for Monika's great recipe that was so simple to make and beautiful to look at.

Rhubarb is in season until around mid-October, but I think we can use other fruits as well, such as apples, berries or canned sour cherries.


Rhubarb cake recipe

Use 21-centimeter round cake pan with removable bottom

Ingredients

300 grams fresh rhubarb

2 tablespoons sugar

150 grams cake flour

1 teaspoon baking powder

Pinch of salt

75 grams butter

75 grams sugar

3 egg yolks

Dash of vanilla extract

For meringue

3 egg whites

100 grams sugar

Pinch of salt

Method

1. Lightly butter (separate from the cooking butter) 21-centimeter cake pan. Preheat the oven to 200 C.

2. Peel and cut rhubarb into 2-centimeter chunks. Sprinkle with 2 tablespoons sugar. Sift cake flour, baking powder and salt. Cream butter in a mixing bowl. Add sugar and mix well. Add egg yolks and a dash of vanilla extract and mix. Add sifted flour mixture and combine well.

3. Put the dough in the cake pan, and smooth the surface with a spoon or spatula. Top the dough with rhubarb. Bake in preheated oven for 20 minutes.

4. While baking, prepare meringue. In a mixing bowl, combine egg whites, sugar and salt. Whisk until stiff peak forms. Remove the cake from the oven, and top with meringue. Turn the heat to 150 C and bake for 30 minutes.
