Stir Fry Veggie

sooo... ive never cooked a pure green dish its always meat 7 days a week with onions or potatoes in it to "supplement" the veggies... so gonna need some help making a nice one if anyone can help..

anyway, my gf cant stand that i dont cook greens.. so imma going to try a simple stir fry veggie dish now. about a month ago, i did it once, chopped garlic... oil the pan, throw in garlic, wash the veggie, dry it, throw it in, added 1 tablespoon soy sauce and oyster sauce. it worked out alrite, tad salty but im alrite with it... did it with lettuce thou.. coz i was getting rid of my leftover lettuce for my sandwiches

this time i bought a bunch of spinach... and want to at least follow a proper recipe be it the simplest ever. anyone? i dont have chinese wine currently...

not all my food are come out tasty... anyway.. somehow i cant find simple recipe to stir fry veggie like those i get at home... so wonder if anyone have a proper one i can follow

My mum just stir fries whatever veggie she can lay her hands on for my lunch. Celery, mushroom, capsicum, whatever!

According to my mum its:

4 sticks of celery, 1/2 cabbage, 1 capsicum, 1 carrot. All sliced.
About 4 chopped garlic, 1 tbs oyster sauce,1/2 teaspoon salt, oil.

Heat up oil in wok and add garlic, fry untill got nice smell. Add cabbage first and stir fry. Add abt 1/4 rice bowl of water. Add celery,carrot and capsicum, stir fry. Add salt. Cover for 2mins. Add oyster sauce, mix well for 1 min.

DONE!

1 of the most common problem with veg is overcooking.

Just some simple pointers for you.

After washing and cutting of veg, seperate the leaves and stems. Try to cut the stems into similiar size.

Before frying the veg, blanch them in hot water 1st, then place them in a colander.

Heat the wok, @ 2 tps of oil. When hot, @ some mince garlic in and turn the heat down by half.

When the garlic smell is out, max the heat.

Then @ the stems in to stirfry for 2 mins. @ 50ml of water. Then @ the leaves in for abt 2min or so. Stir every 20sec.

Mix 1 tsp of oyster sauce with 1tbs of water. @ into the veg stir it and seve.

chef@work added 2 Minutes and 45 Seconds later...

Another alternative.

Wash and cut yr veg.

Place them in a heat proof dish. @ abt 50ml of water.

Microwave @ 70% heat for 2/3mins.

@ oyster sauce and serve.

chef@work added 4 Minutes and 5 Seconds later...

Another alternative.

Get fresh tofu. Serve on a plate.

Dribble some lite & dark soya sauce and some kecap manis.

Sprinkle some spring onions.

Heat oil in wok. Pan fry some mince garlic. Pour over tofu.

how long do i have to blanch em? drop em in and take them out immediately?
seems none of you use soy sauce to stir fry (tinsel added salt thou, how much?), note taken..
its spinach, do i still have to separate leaves and stems?
whats the 50ml water for?
i dont have a wok, can i cover my pan and let the condensation be like the 50ml water?

I think blanch is like a couple of seconds only.

Haha i did say! 1/2 teaspoon salt! I dont know abot the rest though, but i have a feeling the water is to make the gravy. You dont want you veggies to be damn dry right. Haha.

In the case of veg, I recommend blanching between 15-30s.

50ml of water acts as steam while in a microwave. Prevents the veg from drying out.

If you are using a pan, u can fry it still. Add water abt 50ml, too to help it to cook.

thanks guys! my first attempt seemed to overcook the spinach... i didnt add water that time =p... gonna try that now and keep watch on the time...

Personally, I would say that cooking veg in boiling water is the best.

No oil, no spills, no splatters.

The thing is, do not over cook veg, regardless if u stir fry, deep fry, microwave, boil...

A slight crunch is the best. Abit of oyster is alrite.
