Thai Red Ruby

Thai Red Ruby is a common dessert into Singapore. We can easily find it selling in food court and hawker center. But I wonder how many people know that it is actually make from water chestnut? I happened to watch a chef cook this dessert on TV and was amazed to know that it is actually make from water chestnut! Since it aroused my interest, I decided to make my first attempt on this dessert and the result was satisfaction.

Ingredients:
15 pieces of water chestnuts (cut into small cubes around 5 mm)
5 drops of red coloring
1 tbsp of sugar
1 cup of water
1 cup of tapioca flour
3 cup of cold water
1 packet of 200 ml coconut milk

Steps:
1. Boil 1 cup of water together with sugar and stir until the sugar dissolve, set aside and chill in the fridge.
2. Boil the coconut milk using small fire, set aside and chill in the fridge. (optional)
3. Mix the red coloring with the water chestnuts and stir until each piece is evenly coat in red.
4. Pour ½ cup of tapioca flour into a plastic bag, add in the water chestnuts and shake well.
5. For a bigger ruby, sprinkle another 1 tbsp of water onto the water chestnuts and pour in another ½ cup of tapioca flour, and shake well again till each piece is cover with flour.
6. Pour the water chestnuts into a sieve and sieve away the excess flour.
7. Cook the water chestnuts into a pot of boiling water for 3 minutes.
8. Scope the water chestnuts from the pot and pour into a bowl of cold water.
9. For individual serving, scope a few spoonfuls of water chestnuts, and add in the sugar syrup and coconut milk base on individual preference.
10. You can also simply mix the water chestnuts together with the sugar syrup and coconut milk in a large bowl and serve.

RecipeMummy’s Advise:
1. For young children to consume coconut milk, it’s always safer to boil it first.
2. To cut down on the preparation time, you can buy water chestnut which are already de-skin from supermarket such as Sheng Siong. I was unable to find de-skin water chestnut from NTUC fair price supermarket.
