Use your noodles! Japanese udon noodles with tofu and pepper

Enjoy a taste of the exotic East with quick, healthy (and deliciously spicy!) stir-fries, salads and soups

Serves 4


Unusual: These thicker noodles make for a meaty dish

INGREDIENTS
  • 400g (14oz) fresh udon noodles
  • 2tbsp vegetable oil
  • 400g (14oz) firm tofu, cut into 2cm cubes
  • 2tsp grated ginger
  • 6 spring onions, sliced into 2cm diagonal lengths
  • 1 red chilli, finely chopped
  • ˝ a red pepper and ˝ a yellow pepper, deseeded and cut into thick

strips
  • 200g (7oz) shiitake mushrooms, thickly sliced
  • 2tbsp each dark soy sauce and oyster sauce
  • 1tbsp cornflour mixed with 2tbsp cold water
  • 50ml (2fl oz) mirin (rice wine)
  • 200ml (7fl oz) vegetable stock
  • Sliced spring onion to garnish

METHOD

1 Cook the noodles according to the packet instructions, drain and set aside. Meanwhile, heat the oil in a wok until hot. Add the tofu in batches and fry for 3-4 minutes until golden.

2 Remove and drain on kitchen paper. Add the ginger, spring onions, chilli, peppers and mushrooms to the wok and stir-fry over a high heat for 3-4 minutes. In a separate bowl, mix together the soy sauce, oyster sauce, cornflour mixture, mirin and stock. Add to the wok and bring to a boil.

3 Reduce the heat, return the tofu to the wok and simmer gently for 2-3 minutes. Add the noodles, toss to mix well and serve in warmed bowls, garnished with spring onion.

It is very healthy noodles which contains vegetables as well as tofu. You used vegetable oil also for those who are conscious in their body and undergo for diet. I will add this recipe to my lists and share some to my family.
