Use your noodles! Vietnamese salmon pho noodle soup

Enjoy a taste of the exotic East with quick, healthy (and deliciously spicy!) stir-fries, salads and soups

Serves 4


So much flavour: A great combination of sour and sweet

INGREDIENTS

● 1tbsp vegetable oil

● 6 pink shallots, finely sliced

● 1 red and 1 green chilli, finely sliced

● 1 cinnamon stick and 1 star anise

● 5cm (2in) piece stem ginger, thinly sliced

● 4tbsp lemongrass, very finely chopped

● 400ml (14fl oz) chicken or fish stock

● 2tbsp fish sauce

● 1tbsp soft brown sugar

● 400g (14oz) salmon fillets, skinned and cut into cubes

● 6 baby pak choi, halved

● 400ml (14fl oz) coconut milk

● Juice of 2 limes

● 250g (9oz) flat rice noodles (banh pho in Vietnamese)

● Slivers of red chilli and sliced pink shallots to garnish

METHOD

Add the oil to a pan and gently fry the shallots, chillies, cinnamon stick, star anise and ginger for 2 minutes. Add the lemongrass and stock and bring to a simmer.

Stir in the fish sauce, brown sugar and salmon and simmer for 10 minutes, until the salmon pieces are cooked. Add the pak choi, coconut milk and lime juice. Warm until the pak choi wilts.

In a separate pan, cook the noodles, drain and divide between 4 warmed bowls. Ladle over the sauce. Garnish with red chillies and sliced pink shallots, and serve immediately.
